3 medium zucchini, halved and seeded
2 tablespoons olive oil
salt & pepper to taste
8 ground Italian sausage
4 chopped scallions
8 diced tomatoes
8 mozzarella cheese (or provolone, havarti, fontina, cheddar)
1 fresh basil, chopped
1 teaspoon crushed red pepper flakes
2 Parmesan cheese (optional)
2 toasted pine nuts
