Ingredients

2 tablespoons cornstarch
½ teaspoon sugar
¼ teaspoon salt
5 boneless skinless chicken breasts, cut into 1-inch cubes
¼ cup oil
2 tablespoons minced fresh gingerroot (can use up to 1 tablespoon more if desired)
1 tablespoon minced fresh garlic
1 small onion, chopped
2 red bell peppers, chopped into 1-inch pieces
2 carrots, sliced thinly diagonally
2 cups cashews (or to taste)
½ cup ketchup
4 tablespoons soy sauce
½ teaspoon salt
2 tablespoons Worcestershire sauce
3 tablespoons sugar
1 ½ teaspoons sesame oil
¼ teaspoon cayenne pepper (can use more to taste)
½ cup chicken broth

Instructions

    1. Prepare the sauce by combining all the sauce ingredients in a bowl; set aside.
    2. In a medium bowl, coat the chicken with cornstarch, sugar, and salt ensuring each piece is evenly coated.
    3. Heat oil in a wok or large frypan until hot, but not smoking.
    4. Add the coated chicken, ginger, garlic, and onion to the wok; stir-fry for about 1 minute.
