A delicious and comforting pumpkin turkey chili slow-cooked to perfection in a crockpot.

Ingredients

1 tablespoon vegetable oil
1 onion, chopped
1 green pepper, chopped
1 yellow bell pepper, chopped
1 garlic clove, minced
1 lb ground turkey
1 (15 ounce) can tomatoes, diced
2 cups cups pumpkin puree
1 12 tablespoons chili powder
12 teaspoon pepper
1 dash salt
12 cup cheddar cheese, shredded (optional)
12 cup sour cream (optional)

Instructions

1. Heat vegetable oil in a large skillet. Saute chopped onion, green pepper, yellow bell pepper, and minced garlic until tender. Add ground turkey and cook until browned. Transfer the mixture into the crockpot.
2. Stir in diced tomatoes and pumpkin puree.
3. Add chili powder, pepper, and a dash of salt. Mix well.
4. Cover and cook on low for 4-5 hours until flavors meld.
5. When ready to serve, top with shredded cheddar cheese and a dollop of sour cream, if desired.
