Delight in these savory Italian turkey mini meatloaves, a perfect blend of lean ground turkey, aromatic Italian seasonings, and gooey mozzarella cheese. Baked to perfection in a muffin tin and topped with a flavorful spaghetti sauce, these mini meatloaves are a delightful twist on a classic dish.

Ingredients

For the meatloaves

1 lb lean ground turkey breast
1 small onion, diced
minced garlic, ½-1 teaspoon
1 cup shredded mozzarella cheese, divided
1 cup spaghetti sauce, plus 2 tablespoons
1 egg
3 tablespoons grated parmesan cheese
4 tablespoons Italian seasoned breadcrumbs
2 teaspoons Italian seasoning

Instructions

  • For the meatloaves

    1. Preheat the oven to 425°F (220°C) and grease a 6-cup muffin tin with nonstick cooking spray.
    2. In a mixing bowl, combine the lean ground turkey, diced onion, 3/4 cup of shredded mozzarella cheese, 1/3 cup of spaghetti sauce, egg, grated parmesan cheese, Italian seasoned breadcrumbs, and Italian seasoning.
    3. Divide the meat mixture evenly into the muffin tin cups.
    4. Top each mini meatloaf with 2 tablespoons of spaghetti sauce and sprinkle with the remaining 1/4 cup of shredded mozzarella cheese.
    5. Bake in the preheated oven for approximately 20 minutes or until cooked through.
    6. These mini meatloaves can also be frozen and reheated later with delicious results.
