For the potatoes

18 new potatoes, quartered (about 2 ¾ lbs.)
1/4 cup butter
2 cloves garlic, minced (more or less to taste)
1 tablespoon chopped fresh parsley
1/4 teaspoon pepper
1/4 - 1/2 teaspoon salt (optional)
1/2 - 1 tablespoon chopped fresh dill (optional)

Instructions

  • For the potatoes

    1. Place the new potatoes in a large saucepan filled with salted water. Cook covered for 10 minutes or until tender. Be careful not to overcook the potatoes to avoid them becoming mushy.
    2. In a small skillet over medium-high heat, melt the butter.
    3. Add minced garlic and salt (optional) to the skillet. Cook while stirring constantly for about 3 minutes or until garlic is tender.
    4. Add the chopped parsley, pepper, and dill (optional). Pour this herb and garlic butter mixture over the potatoes, gently tossing to coat them.
