Ingredients

3 12 cups unsifted flour
1 teaspoon salt
1 cup milk
14 cup margarine or butter
3 tablespoons sugar
2 packages (1/4 ounce) dry yeast
12 cup water

Instructions

  • For preparing the dough

    1. Preheat the oven to 425 degrees F.
    2. In a large bowl, thoroughly mix 1 1/2 cups of unsifted flour, sugar, salt, and two packages of dry yeast. Set aside.
    3. In a saucepan, combine 1 cup of milk, 1/4 cup of margarine or butter, and 1/2 cup of water.
    4. Heat over low heat until the liquids are very warm (120 to 130 degrees F). Margarine does not need to melt.
    5. Gradually add the warm milk mixture to the dry ingredients.
    6. Beat at medium speed for 2 minutes, scraping the bowl occasionally. (A stand mixer can be used for this step).
    7. Add 1/2 cup of flour and beat at high speed for 2 minutes, scraping the bowl occasionally.
    8. Stir in enough additional flour to make a soft dough.
    9. Turn the dough out onto a lightly floured board; knead until smooth and elastic, about 5 minutes.
    10. Place the dough in a greased bowl, turning to grease the top.
    11. Cover and place the bowl over a pan of water that is about 98 degrees.
    12. Let the dough rise for 15 minutes.
  • Shaping and baking the rolls

    1. Punch the dough down and turn it out onto a lightly floured board.
    2. Shape the dough into rolls and place them on a well-greased pan.
    3. Cover and let the rolls rise in a warm, draft-free place for about 15 minutes or until they are almost doubled in bulk.
    4. Bake at 425 degrees F for about 12 minutes.
