Instructions

- Preheat the oven to 400°F (200°C).
- In a 9x12 or similar pan (such as a round deep dish pizza pan), combine water, rice, green bell peppers, onions, and tomato sauce.
- Arrange the chicken strips evenly over the rice mixture, ensuring they are partially submerged in the mix.
- Evenly pour the diced tomatoes over the entire dish.
- Sprinkle garlic powder, Mrs. Dash Italian seasoning, cilantro, salt substitute, and pepper evenly over the entire dish.
- Bake uncovered for 35 minutes.
- Sprinkle both grated Parmesan cheese and shredded low-sodium cheddar cheese over the top, followed by the parsley, and bake for an additional 10 minutes.
- Optional: Serve with additional Parmesan cheese at the table. For extra spice, consider adding Mrs. Dash Extra Hot seasoning.
