Instructions

1. Preheat the oven to 400°F (200°C).
2. In a 9x12 or similar pan (such as a round deep dish pizza pan), combine water, rice, green bell peppers, onions, and tomato sauce.
3. Arrange the chicken strips evenly over the rice mixture, ensuring they are partially submerged in the mix.
4. Evenly pour the diced tomatoes over the entire dish.
5. Sprinkle garlic powder, Mrs. Dash Italian seasoning, cilantro, salt substitute, and pepper evenly over the entire dish.
6. Bake uncovered for 35 minutes.
7. Sprinkle both grated Parmesan cheese and shredded low-sodium cheddar cheese over the top, followed by the parsley, and bake for an additional 10 minutes.
8. Optional: Serve with additional Parmesan cheese at the table. For extra spice, consider adding Mrs. Dash Extra Hot seasoning.
