This delicious roast turkey recipe results in a moist and tender turkey with perfectly crispy skin. Ideal for your holiday feast!

Ingredients

1 (5 - 20 lb) fresh or frozen turkey (thawed) or 1 (5 - 20 lb) turkey breast (thawed)
1/4 cup butter, melted
12 ounces chicken broth (can use part beer or white wine)
1 - 2 tablespoons mayonnaise

Instructions

    1. Place the turkey or turkey breast in a roasting pan.
    2. In a bowl, combine the melted butter and chicken broth.
    3. Pour the butter and broth mixture over the turkey.
    4. Rub the mayonnaise all over the exterior of the turkey.
    5. Lightly season with salt and pepper, if desired.
    6. Roast the turkey at 300°F-325°F until the internal temperature reaches 170°F on an instant-read thermometer. In the last 30-45 minutes, increase the temperature to 350°F to crisp the skin.
    7. For a fresh turkey of 18-20 lbs., roast at 250°F in a convection oven for about 4 hours to reach the correct temperature.
    8. Remove the turkey from the oven and let it rest for approximately 30 minutes before slicing.
    9. Note: The butter and broth are used for making gravy. If you require more gravy, double the quantity of both ingredients.
    10. To prepare the gravy: Pour the pan drippings into a saucepan and bring to a simmer over medium heat. Mix 1 tablespoon of cornstarch per cup of broth/drippings with 1/4 cup of cold water (usually 2-3 tablespoons are needed). Stir well to dissolve. Add the cornstarch mixture to the broth and stir until thickened. Season with salt and pepper. If the gravy is too thin, dissolve more cornstarch in water and add until desired thickness. If it becomes too thick, adjust by adding water or more broth to achieve the desired consistency.
