Ingredients

For chicken and mushroom sauce

1 lb boneless skinless chicken breast halves
¼ cup all-purpose flour
3 tablespoons butter, divided
1 cup sliced fresh mushrooms
12 cup chicken broth
¼ teaspoon salt to taste
teaspoon ground black pepper to taste
cup shredded mozzarella cheese
cup grated parmesan cheese
¼ cup sliced green onions
¼ cup dry white wine
1 tablespoon cornstarch

Instructions

For preparing the chicken

1. Begin by flattening each chicken breast half to 1/4" thickness.
2. Place the flour in a resealable plastic bag and add the chicken pieces a few at a time.
3. Seal the bag and shake it to coat the chicken evenly.
4. In a large skillet, brown the chicken on each side in 2 tablespoons of butter.
5. Transfer the browned chicken to a greased 11" x 7" x 2" baking dish.

For mushroom sauce and baking

1. In the same skillet, sauté the sliced mushrooms in the remaining butter and season with salt and pepper.
2. Bring the mushroom mixture to a boil, then add the white wine and cornstarch.
3. Cook for 3 minutes or until the sauce thickens.
4. Pour the mushroom sauce over the chicken in the baking dish.
5. Bake the dish, uncovered, at 375°F for 15 minutes.
6. Sprinkle the shredded mozzarella cheese, grated parmesan cheese, and sliced green onions over the chicken.
7. Bake for an additional 5 minutes until the cheeses are melted and bubbly.
