Ingredients

For Beef Enchiladas

1 lb ground beef
1 onion, chopped
1 bell pepper bell pepper, chopped
2 cloves garlic cloves, minced
2 serrano peppers (optional) or jalapeno peppers, minced (optional)
1 14 ounces ounces taco seasoning mix
4 ounces ounces cream cheese, softened
2 cups cups enchilada sauce, divided
8 ounces ounces monterey jack cheese
12 flour tortillas, softened (6 inch)

Instructions

  • For Beef Enchiladas

    1. Heat a large skillet over medium-high heat. Brown the ground beef, onions, bell peppers, and garlic until the beef is browned and the vegetables are softened.
    2. Add the taco seasoning and 1/2 cup of enchilada sauce to the skillet, stirring until well combined. Turn off the heat and stir in the softened cream cheese until melted and fully incorporated.
    3. Grease a 13x9 casserole dish and spread 1/2 cup of enchilada sauce on the bottom. Spoon about 1/4 cup of the beef mixture down the center of each warmed tortilla, roll them up, and place them seam side down in the dish.
    4. Pour the remaining 1 cup of enchilada sauce over the rolled enchiladas. Sprinkle the Monterey Jack cheese on top.
    5. Bake the enchiladas at 350°F for 20 minutes or until the cheese is melted and bubbly. Serve with rice and beans, if desired.
