A delicious and hearty meatloaf made with a savory mix of hash brown potatoes, onions, garlic, and ground beef, topped with a ketchup glaze.

1 12 cups hash brown potatoes
1 onion, chopped
2 garlic, minced
1 tablespoon olive oil
3 eggs, lightly beaten
0.67 cup Italian seasoned breadcrumbs
13 cup ketchup
1 teaspoon salt
14 teaspoon pepper
1 12 lbs lean ground beef
13 cup ketchup

Instructions

    1. Preheat the oven to 375 degrees F. Place the refrigerated shredded hash brown potatoes in a large bowl and set aside.
    2. In a heavy skillet over medium heat, sauté the chopped onion and minced garlic in olive oil until tender, for about 5 minutes. Add this mixture to the bowl of potatoes. Then, add the lightly beaten eggs, Italian seasoned breadcrumbs, 1/3 cup of ketchup, salt, and pepper. Mix everything well until thoroughly combined. Finally, add the lean ground beef and gently mix just until combined.
    3. Shape the meatloaf mixture into an 8 x 4-inch loaf on a broiler pan. Spread the remaining 1/3 cup of ketchup over the top of the loaf. Bake in the preheated oven for 70 to 75 minutes, or until the center is no longer pink and an instant-read thermometer reads 160 degrees when inserted in the center of the loaf.
    4. Let the meatloaf stand, covered, for 15 minutes before slicing to allow the juices to settle.
