Savory Hash Brown Meatloaf
A delicious and hearty meatloaf made with a savory mix of hash brown potatoes, onions, garlic, and ground beef, topped with a ketchup glaze.

0.67 | cup Italian seasoned breadcrumbs |
1⁄3 | cup ketchup |
1 | teaspoon salt |
1⁄4 | teaspoon pepper |
1 1⁄2 | lbs lean ground beef |
1⁄3 | cup ketchup |
Instructions
1. | Preheat the oven to 375 degrees F. Place the refrigerated shredded hash brown potatoes in a large bowl and set aside. |

2. | In a heavy skillet over medium heat, sauté the chopped onion and minced garlic in olive oil until tender, for about 5 minutes. Add this mixture to the bowl of potatoes. Then, add the lightly beaten eggs, Italian seasoned breadcrumbs, 1/3 cup of ketchup, salt, and pepper. Mix everything well until thoroughly combined. Finally, add the lean ground beef and gently mix just until combined. |
3. | Shape the meatloaf mixture into an 8 x 4-inch loaf on a broiler pan. Spread the remaining 1/3 cup of ketchup over the top of the loaf. Bake in the preheated oven for 70 to 75 minutes, or until the center is no longer pink and an instant-read thermometer reads 160 degrees when inserted in the center of the loaf. |
4. | Let the meatloaf stand, covered, for 15 minutes before slicing to allow the juices to settle. |
