1 medium onion, finely chopped
1 tablespoon canola oil
2 eggs
12 cup 2% low-fat milk
2 teaspoons lemon juice
1 teaspoon salt
1 teaspoon dried basil
12 teaspoon dried oregano
12 teaspoon pepper
2 whole wheat bread crumbs, soft
1 (10 ounce) package frozen spinach, thawed and squeezed dry
2 12 lean ground turkey
12 cup salsa
1 tablespoon butter

Instructions

1. Begin by sautéing finely chopped onion in canola oil until tender; set aside.
2. In a mixing bowl, combine eggs, 2% low-fat milk, lemon juice, salt, dried basil, dried oregano, and pepper. Add the soft whole wheat bread crumbs, thawed and squeezed dry spinach, and the reserved sautéed onion; stir the ingredients together until well combined. Crumble the lean ground turkey over the mixture and mix until evenly blended.
3. Shape the mixture into a loaf measuring 12x5 inches and place it in a 13x9x2-inch baking dish coated with nonstick cooking spray. Spoon salsa generously over the top of the meatloaf.
4. Bake the meatloaf, uncovered, at 350 degrees Fahrenheit for 30 minutes. Drizzle the top with butter and continue baking for an additional 30-35 minutes, or until a meat thermometer inserted into the loaf reads 165 degrees Fahrenheit.
