Savory Turkey Meatloaf

Instructions
1. | Begin by sautéing finely chopped onion in canola oil until tender; set aside. |

2. | In a mixing bowl, combine eggs, 2% low-fat milk, lemon juice, salt, dried basil, dried oregano, and pepper. Add the soft whole wheat bread crumbs, thawed and squeezed dry spinach, and the reserved sautéed onion; stir the ingredients together until well combined. Crumble the lean ground turkey over the mixture and mix until evenly blended. |
3. | Shape the mixture into a loaf measuring 12x5 inches and place it in a 13x9x2-inch baking dish coated with nonstick cooking spray. Spoon salsa generously over the top of the meatloaf. |
4. | Bake the meatloaf, uncovered, at 350 degrees Fahrenheit for 30 minutes. Drizzle the top with butter and continue baking for an additional 30-35 minutes, or until a meat thermometer inserted into the loaf reads 165 degrees Fahrenheit. |
