- Prepare the crockpot by spraying the interior with nonstick spray or use crockpot liners for easy cleanup.
- If desired, season both sides of the chicken with salt and pepper.
- Place the raw chicken at the bottom of the crockpot.
- In a medium bowl, mix together the corn, beans, diced tomatoes, green chilis, and spices. Pour the mixture over the chicken.
- Cook on low heat for 4 to 5 hours until the chicken is tender and fully cooked.
- Remove the chicken, shred it using two forks (be cautious as the meat will be hot), and return it to the crockpot. Stir to combine.
- Place the cream cheese on top of the mixture and allow it to melt for about 15 minutes. Then stir to completely incorporate the cream cheese.
- Let the mixture sit for an additional 15 minutes before serving to allow the flavors to meld.
- Warm the tortillas, add approximately 1/2 cup of the chicken mixture to each tortilla, and roll or fold into a burrito.
