Ingredients

8 ounces macaroni, cooked and drained
1 cup onion, chopped
cup green pepper, chopped
2 tablespoons oil
1 lb ground beef
1 teaspoon salt
teaspoon pepper
6 tablespoons cheddar cheese, grated
½ cup margarine
2 tablespoons flour
1 ½ cups milk

pepper
½ cup canned tomato, undrained

Instructions

1. Begin by boiling the macaroni until al dente. Drain and set aside.
2. In a skillet, brown the ground beef with chopped onions and green peppers. Once cooked, drain any excess fat. Season with salt and pepper.
3. Prepare a white sauce by melting margarine in a saucepan, then stirring in flour to form a roux. Gradually whisk in milk until the mixture thickens. Add diced tomatoes and grated cheddar cheese. Stir until the cheese is melted and the sauce is well combined.
4. To assemble the casserole, layer the cooked macaroni, seasoned ground beef mixture, and white sauce in a baking dish. Repeat the layers as needed.
5. Top the casserole with the remaining grated cheddar cheese.
6. Bake the casserole at 400°F for about 40 minutes, or until golden and bubbly.
