1 cup milk, at room temperature
2 12 tablespoons butter, at room temperature
12 cup egg substitute
1 teaspoon salt
2 cups bread flour
2 cups whole wheat flour
14 cup sugar
2 14 teaspoons active dry yeast
12 cup chopped seeded jalapeno pepper
2 tablespoons chopped seeded jalapeno peppers
9 garlic cloves, minced
2 tablespoons butter, at room temperature and DIVIDED
3 tablespoons grated parmesan cheese, DIVIDED

  • Preparation

    1. Set out 2 tablespoons of butter for the filling to soften for spreading.
    2. In the bread machine pan, layer the first eight ingredients in the order recommended by the manufacturer.
    3. Select the dough setting and monitor the dough consistency after 5 minutes; adjust with 1 to 2 tablespoons of water or flour if necessary.
    4. Combine the chopped jalapenos and minced garlic in a small bowl; set aside.
    5. Once the dough cycle is complete, transfer the dough onto a lightly floured surface.
    6. Divide the dough into two equal portions.
    7. Roll each portion into a 14-in. x 9-in. rectangle. Spread 1-1/2 teaspoons of butter on each rectangle. Reserve the remaining butter for later use. Sprinkle 1 tablespoon of parmesan cheese and half of the jalapeno mixture on each rectangle.
    8. Roll up the dough jelly-roll style, starting from a short side, and seal the seams.
    9. Place the rolled dough in two 8-in. x 4-in. mini loaf pans coated with cooking spray.
    10. Cover the pans and allow the dough to rise in a warm place until doubled in size, approximately 40 minutes.
    11. Melt the remaining butter and brush it over the risen loaves.
    12. Sprinkle the loaves with the remaining parmesan cheese.
    13. Bake the loaves at 350°F for 25 to 30 minutes or until they turn golden brown.
    14. Remove the loaves from the pans and place them on wire racks to cool.
