Sweet and Sour Chicken

This version moves the recipe from a plain stir-fry toward the familiar takeout-style dish: crisp battered chicken tossed with bell peppers, onion, pineapple, and a glossy sweet-sour sauce. Pineapple juice, vinegar, sugar, ketchup, and soy sauce give the sauce its bright, balanced flavor without making it heavy.

1 | can pineapple chunk, 20 ounce, drained with 3/4 cup juice reserved |
1⁄3 | cup ketchup |
1⁄3 | cup rice vinegar |
1⁄4 | cup granulated sugar |
1 | tablespoon soy sauce |
1 | tablespoon cornstarch |
2 | tablespoons water, cold |
Stir-Fry | |
1 | tablespoon vegetable oil |
1 | red bell pepper, cut into 1-inch pieces |
1 | green bell pepper, cut into 1-inch pieces |
1 | yellow onion, cut into 1-inch pieces |
2 | cloves garlic, finely chopped |
1 | teaspoon ginger, fresh, finely grated |
2 | green onion, thinly sliced |
Instructions
| 1. | Toss the chicken with the soy sauce, rice wine, salt, and white pepper, then let it stand for 10 minutes while you prepare the sauce and vegetables. |

| 2. | Whisk the reserved pineapple juice, ketchup, rice vinegar, sugar, and soy sauce in a bowl until the sugar mostly dissolves. |
| 3. | Stir the cornstarch and cold water for the sauce together in a separate small bowl to make a smooth slurry. |
| 4. | Stir the beaten egg into the marinated chicken until every piece is coated. |
| 5. | Whisk the cornstarch, flour, and baking powder in a large bowl, then add enough cold water to make a thick batter that clings to the chicken. |

| 7. | Heat 4 cups vegetable oil in a wok or heavy pot to 350°F. |
